Stir-fried Beef with Ginger & Spring Onion

What you'll need:

Ingredients
- 200g of Sliced Beef
- 1 1/2 Inch Stick of Ginger (Thinly Sliced)
- Stalks of Spring Onion (Cut into 3cm lengths)
- 60g of Onion (Optional) (Cut into 2.5cm pieces)
- 3 Tablespoons of Oil
- 1/2 Teaspoon of Sesame Oil
- 1/2 Teaspoon of Corn Starch mixed with 2 Tablespoons of Water for thickening
Seasoning
- 2 Tablespoons of Ginger Wine
- 150ml of Water or Chicken Stock
- 1/2 Teaspoon of Oyster Sauce
- 1 Teaspoon of Light Soy Sauce
- Few drops of Dark Soy Sauce
- A Pinch of Salt
- A Pinch of Sugar
Marinating Sauce
- 1 Tablespoon of Ginger Wine
- 1 Teaspoon of Light Soy Sauce
- A Pinch of Sugar
- 1/4 Teaspoon of Baking Powder
- 1 Tablespoon of Water
Instructions
- Mix the meat with the marinating sauce thoroughly for an hour before cooking.
- Heat up the oil and stir-fry the ginger at medium heat until light brown and aromatic.
- Add in the meat and stir-fry at high heat for 1 minute.
- Add in the onion where appropriate and the seasoning sauce. Cover wok with tight lid for 1 1/2 minute.
- Add in spring onion and stir-fry for 15 seconds. Add in sesame oil and thicken with corn starch.
- Try serving with a cold bottle of Tsingtao Beer.
