Stir-fried spicy Szechuan French Bean

- 200g Fine Beans (Cut into 6cm lengths)
- 1/4 Green Capsicum (Shred into 6cm x 0.5cm)
- 1/4 Red Capsicum (Shred into 6cm x 0.5cm
- 50g Onion (Shred into 6cm x 0.5cm)
- 50g Bamboo Shoot (Shredded)
- A Few Pieces of Black Fungus (Soaked with Water)
- 1 1/2 Teaspoons Fermented Blackbean (Chopped)
- 3 Small Hot Chilli (Chopped)
- 2 Cloves of Garlic (Crushed and Chopped)
- 150ml of Water
- 2 Tablespoons of Oil
- 1 Teaspoon of Corn Flour mixed with 1 Tablespoon of Water
- Garlic
Seasoning
- 1 1/2 Tablespoons of Chilli Bean Sauce
- 1/2 Tablespoon Crushed Yellow Bean Sauce
- 1/4 Teaspoon of Oyster Sauce
- 1 Teaspoon of Light Soy Sauce
- 1/2 Teaspoon of Sugar
Instructions
- Blanch the fine beans for 15 seconds.
- Heat up the oil and stir-fry the garlic and chillies at low heat until fragrant and aromatic.
- Add the other ingredients and stir-fry at high heat for 45 seconds.
- Add in water and seasoning.
- Bring it to boil and thicken with corn starch.
- Toss for a few seconds and serve.
- Try serving with a cold bottle of Tsingtao Beer.
