Stir-fried spicy Szechuan French Bean

Ingredients

Ingredients

  • 200g Fine Beans (Cut into 6cm lengths)
  • 1/4 Green Capsicum (Shred into 6cm x 0.5cm)
  • 1/4 Red Capsicum (Shred into 6cm x 0.5cm
  • 50g Onion (Shred into 6cm x 0.5cm)
  • 50g Bamboo Shoot (Shredded)
  • A Few Pieces of Black Fungus (Soaked with Water)
  • 1 1/2 Teaspoons Fermented Blackbean (Chopped)
  • 3 Small Hot Chilli (Chopped)
  • 2 Cloves of Garlic (Crushed and Chopped)
  • 150ml of Water
  • 2 Tablespoons of Oil
  • 1 Teaspoon of Corn Flour mixed with 1 Tablespoon of Water
  • Garlic

Seasoning

  • 1 1/2 Tablespoons of Chilli Bean Sauce
  • 1/2 Tablespoon Crushed Yellow Bean Sauce
  • 1/4 Teaspoon of Oyster Sauce
  • 1 Teaspoon of Light Soy Sauce
  • 1/2 Teaspoon of Sugar

Instructions

  1. Blanch the fine beans for 15 seconds.
  2. Heat up the oil and stir-fry the garlic and chillies at low heat until fragrant and aromatic.
  3. Add the other ingredients and stir-fry at high heat for 45 seconds.
  4. Add in water and seasoning.
  5. Bring it to boil and thicken with corn starch.
  6. Toss for a few seconds and serve.
  7. Try serving with a cold bottle of Tsingtao Beer.
